About the only thing I can't get my CVP-207 to do (as I play in my church) is to sustain one sound by using the sustain pedal while I switch to another preset sound and begin playing with it.

It would be really nice to have a seamless transition from one sound into the next, having the first one release when I lift my sustain pedal, blending right into the second one. On the keyboards that can do this you can begin playing the second sound as soon as you hit the next preset button, actually hearing both sounds until the damper pedal is lifted, releasing the first sound.

Some keyboards can do this, but not the Clavinovas. Any ideas for overcoming this problem?

Would it help to split the keyboard and assign a different voice to each section? That way you could play one voice on one section and transition to another voice by using a different section. I believe you could use the highest or lowest octave, transpose it up or down to the range you want for the instrument you've assigned.

I'll have to test this back home again.. but I thought I remembered trying to switch between voices in-play and the first voice wouldn't die until I released the key I was holding, after which it would switch to the second..

I guess it might be a matter of polyphony though - what you're suggesting is to have 4 layers of music played at the same time. I don't think the system can handle that :)
